Hi, Dave. I know a few years back there was a very whisky-knowledgeable gentleman in the Dallas area by the name of Dr. David McCoy (PhD., not medical). I don't know if he still conducts tastings, but you can probably find him through his excellent website, www.scotchdoc.com.
If I remember correctly, he was a college photography professor, and it shows in the great shots he has of the whisky production process on his site.
