Cask Policy

Following Lex's tangent: I believe the distinction between Bourbon and Tennessee whisky is merely a arbitrary US legalism (they passed a law, for some probably not too compelling but politically favorable reason) making Tennessee whisky "distinct". Before the law, there was no legal distinction. It' not clear that this disctinction is held in many imbiber's minds, as the top-polling American "Bourbon" always comes up as "Jack Daniels", and there is no legal requirement preventing either Bourbon being made in Tennesse or Bourbon being subjected to charcoal filtration (witness Jim Beam's "Choice" Green Label and several offerings from Heaven Hill).
Yes, yes, it might not exactly be the "Lincoln County Process" with it's exact parameters and relative ordering in the maturation steps, but there's nothing preventing the "Bourbon" makers from following these steps exactly, and seems to me we are really mincing very fine points.
So I wouldn't bother at all about the Bourbon/Tennessee Whisky distinction, except in matters of law inside the US. Treat the "Bourbon Cask" provider/source of JD (and George Dickel) just like the other distilleries/sources in your investigation, and you would go astry and mis-conclude.
SLainte!

Subject: Re: Cask Policy
Going off at a slight tangent: I've seen empty casks at Ardbeg which clearly
stated they were from Jack Daniels. So I don't think the industry separates
'bourbon' from 'tennessee whiskey' when it comes to identifying what's been in
the cask prior to single malt.
Cheers, Lex
